Gjetost

I’vs seen this on sale at stores before, but never really wondered what it was. I found it in bulk at a store today and got a bit of it.

  
It’s gjetost (by a lot of other names, too), a sort-of-cheese from Norway. It’s made by cooking milk, cream and whey together until it caramelizes, which is why it isn’t really a cheese (it’s not cultured, etc). It’s really good and unique, though.

It has a fudge-like texture with a somewhat caramel-y flavor, slightly salty, and very creamy. I put little slices of it on crackers and that was really good.
