Trader Joe’s Reduced Fat Celtic Sharp Cheddar

I picked up a block of this at my last stop at Trader Joe’s, and thought it was worthy of a review.

This isn’t your ordinary cheddar. This isn’t even your ordinary sharp cheddar. I don’t know if it’s just a side effect of it being low fat, but this stuff is almost like a hard cheese. It could pretty easily pass off as a young Parmesan in my book. Looks like it, shreds like it, and tastes quite a bit like it.

But at the same time, it has the meltiness of cheddar. It worked quite well in a pseudo-grilled cheese I made from what supplies I had. And, since it has less fat, the protein and fat didn’t separate into a gross slippery mess as it sometimes does. 

All in all, a very good cheese. And prices very reasonably at six or seven dollars per pound.
